I love this cookbook because the recipes are great but you also point out shortcuts that make life easier without the final product tasting less than fantastic.

This has quickly become one of my favorite cookbooks. The recipes are quick, easy to follow, and foolproof. And the techniques Nick teaches can make a great baker out of anyone.

I'm so glad to see this reissued in paperback. I hope it introduces a whole new set of bakers to this great book.

Thank you for this cookbook! I am a Modern Baker Challenger blogger and I have loved your book. The two things that have changed my baking life forever (so far!) are your pie and tart crust making in the food processor. I no longer HATE pie crust. And, not over beating the butter in the butterscotch chocolate chip cookies. I finally understand why sometimes my cookies were flat!
